Hi I think I’m correct in saying this but would like some input

I think you can choose the order of strikes and they’re effect is immediate for example ..

Let’s say two orcs win a duel vs a mounted knight of minas tirith, can the strikes be rolled one at a time and if the first strike kills the horse then the knight rolls a thrown rider 1 result - being prone would the 2nd Orc strike ( if the knight survived the str 3 thrown rider hit) now actually be two strikes as he is now trapped and prone?

You can roll the Strikes one at a time and therefore choose who you attack based on previous Strikes.

However in the case above, riders do not become thrown until all Strikes have been resolved so wouldn’t be trapped (see page 62 under Strikes against cavalry models).
