So if you win a fight against cavalry can you just bash the horse or do you have to bash the rider technically? Who's strength?

Strength of whoever won. IIRC, Highest strength of mount or rider if the cavalry won. Highest Defense of mount/rider likewise if they lost. Don't use cavalry much - don't like painting horses! - and can't remember who you choose which you hit in melee.

I might just have demonstrated a complete lack of knowledge on the subject mind you.

Alright cool that answers the strength question but is it legal to bash ahorse and if they fall down the rider also falls down that's kind of what I'm wondering the most.

You bash the cavalry model. If it succeeds, then of course there would be a Thrown Rider test.
