I want to create an army of Gondorians, the Fiefdoms, and a few Arnorians as well. Just wondering what of what pieces and what tactics to use.

Any army that would include all those elements would have to be pretty big, best to pick one and start from there. It's probably easiest to start with Gondor since the core has good plastic sets. A couple boxes of WoMT, a box of rangers, a command group, and maybe Faramir (ranger) + Damrod, and Beregond should get you started.

Really comes down to what you want. You are giving yourself a lot of options, so you could use Fiefdom Cavalry with Gondor Cavalry to have a huge horse army with Arnorian rangers, you could use Gondorian and Arnorian men to form a large shieldwall with spear support, and use Clansmen to jump in and hit stuff hard (good with Angbor). You could use ghosts too to mess with evil guys.

Lots of good heroes, like Whafrog mentioned Beregond and Damrod are both excellent and cheap, essential if you want 3 detachments in one force. I also like Denethor and Cirion for Gondor, but they can be a toss up. Personally I like Forlong the Fat as he's a great deal, but Imrahil is good if you build around him. Also I think the Seer for Arnor is nice, its like Fury for Good guys.

I use to like Men-at-arms of Dol Amroth, but pikes only can double support if the other guy is using a pike, and since the Gondor box and Arnorians in general come with spears, you'd really only use the pikes for heroes and if you don't use all your spearmen.

In general though I think the army will probably be a line of guys with shields, with guys with spears behind them, some sort of ranger and/or cavalry component, and then maybe a unit of more elite guys. You could also take some more expensive heroes if you wanted to, but Gondor has sweet cheap heroes so I like to play to that advantage in force building.

Interesting thought. Now this is entirely for table top gaming I assume? Just curious, but what inspired the name? I have a somewhat passing interest personally.

Well, if you don't already know, the Numenoreans lived on an island off Middle Earth and lived longer and were stronger and smarter then normal men. They had connections with the Valar or Vala, I forget, until they captured Sauron and took him to their island. He corrupted their leaders and Numenor was destroyed. However, Elendil and his sons, Isildur and Anarian, formed the kingdoms Arnor and Gondor. Though the Numenoreans mingled with the native women, some of the line still continues and I just thought since all the army is a part of Arnor or Gondor, it would be a cool name.
