Does anyone have any advice on painting white horses? I have tried several times and given up and painted over them. However I am starting on some galadhrim knights and would really like some of the mounts to be white.
I am not the worlds greatest painter so I need something fairly straightforward.

Just start with a light grey as base colour and mix white into it to lighten it up step by step. Also you could use a dark grey was for the mane before you highlight it. That's the way I paint my white horses.. most of it is really just try and error.. :)

do a solid layer of fortress grey over all the body parts, then when dry drybrush skull white a couple of times
this technique works well for me

Take your white and mix in a very small amount of black. Paint the whole horse this colour. Next, add a little more black into the previous mix and paint this into the shadows. Finally, take pure white and paint the highlights. You can add a bit of blonde (bubonic brown + bleached bone) into the mane and tail, as well as stipple some black onto the muzzle. I also stippled some black on the socks. (not shown in the pictures)

That's how I painted some today. (my first ever white horses, which are actually more like a very light grey, but whatever).

Some great advice here and not much I can add beyond the recommendation you have some photos of the subject matter close by. I find that it really helps to catch the small details that you might otherwise miss that often make a grey - like the pinking around the mouth and lighter hoof colour.

Thanks for the advice. I have done some experimenting on a spare rohan horse and the results are better than I have achieved before. I will have a more careful go on some of the galadhrim ones.

I use a basecoat of Space Wolves Grey (its a nice light bluish/grey) believe the conversion to modern color is Fenrisian Grey. This gives a shadowed effect plus you get the bonus of maintaining the difference between your dark spectrum greys on the hooves and nose. I will post a picture when I get a chance.

The mane, tail and sometimes lower legs are more of a yellowish colour than the body, so you might want to put a yellow mix on these areas before you put on the white. Also, the mouth is usually dark grey, sometimes pink. Google images will show you what you're trying to reproduce.
