So recently my GW Deep Brown shade (Agrax Earthshade) has become relatively shiny when applied to my models, regardless of the material the model is made of. I'm unsure as to why this started and how to correct it as that's one of the shades i most use.
Any help would be appreciated

Get a Matt varnish to apply over the top, I use vallejo which is excellent. It will also give the paint some protection from handling.

I also vigorously shake the paint pot for about a minute before using it, I find this makes the wash go on less shiny. I don't remember when, but there was another thread about this on the forum where I found that particular piece of advice.

Yep a shake of the pot is usually enough. The sheen tends to sit on the top of the wash inside the pot once settled so its important to remember that shake if you don't want a shiny mini.
